Queso (or nacho dip)

Last for the game we need some queso! Without any real knowledge of how to make queso other than from tasting it, I'm going to shoot out some queso from the hip. That was an interesting mix of metaphors.

I'm starting with a pot with the rest of the sausage I didn't use on the eggplant.



Then I think queso has onions in it. Or maybe I just have onions in my fridge that I need to use.
And lastly I know queso has cheese in it. Lots of cheese.


And it has pepper too, I think?

The amount of cheese I wanted and the amount of cheese I have don't match up well. Too late to change things now, let's turn on the heat!

It looks queso-like, just with lots of meat and onions.

I added another slice of cheese. This is all the cheese I have!

All right, it's queso-y... or maybe it's better called nacho dip. Sadly, I like jalapeno slices with my nacho dip and I don't have any jalapenos right now.
Overall? Pretty good, if I had more cheese I think it would have turned out perfect. Not too bad for making up a recipe!
