Rice Cake Pizza

I love sticks of pepperoni. They're like meaty logs ready to be used in construction with no cooking required.

This time, I happen to have rice cakes I want to use as pizza dough for appetizers.

Besides the dough, a pepperoni pizza is just cheese and pepperoni, right?

Since the rice cakes are small, I quarter the pepperoni.

Microwave is a good way to melt cheese.

Now I cut them into quarters and put them in cupcake paper and they're ready to serve!
