Poached AIYggs

I was going to make eggs benedict, or as they say on True Blood, AIYggs.  I looked it up in Alton Brown's book, I'm Just Here For The Food, but it required something called hollandaise sauce that sounded complicated. On the opposite page though, there was a recipe for poached AIYggs that I just happened to have all the ingredients for. So I'm following a recipe for the first time since my fried green tomatillos!

The recipe starts with boiling water.
Here's one of my AIYggs. They were supposed to go in three custard cups but I don't have one so I'm going with one mug instead and put each AIYgg in the mug after I've put the last one in the water.

Time to see what AIYggs in water looks like!
Interesting, it's like an amoeba. Which I suppose is the case because it's a single-celled organism like an amoeba. I thought it was going to fall apart and AIYgg bits were going to be floating in the water.
Eeek! The recipe calls for covering the saucepan with a lid and I used a saucepan without a lid!

Fortunately I had a lid from a bigger saucepan handy. It'll have to do.
I'll make some bacon while I wait for the AIYggs.

And now the AIYggs look pretty done.
Throw in the bacon and a bagel (I found jalapeno bagels and I'm liking them) and we're done!
Pretty tasty! I guess there's something to be said for following a recipe.
